Our Environment
We’re committed to sourcing our ingredients as locally as possible, from Brancaster mussels and North Norfolk potatoes to seasonal produce from nearby farms. Whether it’s shrimp from King’s Lynn or pork from Priors Hall Farm, every ingredient we use is chosen with sustainability and minimal food miles in mind.
We believe every ingredient should be used to its fullest potential. From creative initiatives like our Nose to Tail events and the Full Cycle Composting programme to transforming unsold croissants into stunning bread puddings, we’re dedicated to minimising waste and reducing our environmental footprint.
We’re proud to use rapeseed oil in our cooking - genetically unmodified and allergen-free - to ensure a healthier, more sustainable option for our customers. Additionally, we recycle approximately 28,000 litres of used cooking oil into biodiesel annually, ensuring nothing goes to waste.
All our electricity comes from 100% renewable sources, powering our kitchens, bars, and guest facilities with the future in mind.
